again with the lentils!

After making the cabbage rolls, I had leftover lentils and decided to finally try my friend's (a different food blog) lentil enchiladas. Skeptical? I was too! However, they were fantastic. Another simple, affordable meal that each of my family members enjoyed. Score!

Yum yum yummy! You just gave me a light bulb moment. I try to do meatless easy lunches with the chickens and a simple bean and cheese burrito will be added to the list:) and when making ench. I need to try beans I am so boring I always do beef....wonder if I could sneak some beans in the meat mixture and get it past Eric?
