The cucumber vines are producing. We have a steady stream of green beans gracing our table (extra surplus lies awaiting in the freezer), and now I get to add cucumber dishes.

I love fresh slices of cucumber, but if I'm making a simple cucumber salad this is the recipe I enjoy making.

Creamy Cucumber Salad from Amanda Jolley

• 3 sliced cucumbers
• 1 sliced onion
• 1 C. sour cream or mayonnaise
• 1/3 C. white or apple cider vinegar
• 1 t. sugar
• 1 t. salt
• 1/4 t. pepper

Mix, refrigerate overnight and enjoy!
