winter garden goodness
We are surviving the frigid temperatures (Monday was -7, not -3...), and living off the goodness grown last Summer. Today, I made more Squash Soup from and Zucchini and Summer Squash hidden away in the freezer, and as a side dish for dinner I just sauteed Green Beans in bacon grease. They are staying warm in the oven until we sit down as a family to eat.
The more I enjoy our vegetables in the Winter, the more encouraged I am to grow even more in our garden. Do I dare mention that I have seven types of Squash to grow this year? Squash freeze beautifully, and made the most amazing soups. Growing this many varieties, I just might have enough to stock away to last me the entire cold weather season. Winter is for hibernating and dreaming...so I am.
