Bounty from October's garden included most of the carrot, eggplant and sweet potato harvests with additional kale, Swiss chard, and green beans gathered as well. The odds are in our favor to not have a Vitamin C deficiency this coming winter! I've always wondered if we can reach a harvest of 750 pounds and being shy by 48 pounds says that is doable in our modest backyard. A record year of garlic, green beans, potatoes, squash and tomatillos says that we will have kitchen staples for most of the winter. Hard work and planning have allowed for us to have a "grocery store" of sorts within these walls. All of our preserving is done by freezing, dehydrating or cold storage. I haven't taken the extra step of canning my garden harvest, but future years could have me testing that technique, if I choose to take the time. The cold weather months are a welcome break from the heat and the exercise the garden provides. Before we hibernate, though, there are garden boxes to amend, blackberry bushes to transplant, and garlic to plant.
