O, Cilantro!


This is our first year growing Cilantro.

I know.

I don't know why we didn't grow it before,
it's so easy!

This week we had tacos,
so I whipped up an easy salsa.

Black Bean, Corn and Cilantro Salsa

2 cups Black Beans
2 cups frozen Corn, thawed
2 T. extra virgin Olive Oil
1 t. Salt
as much Cilantro as you like

Mix, chill, serve, yum!
